Four Healthy-ish Ice Cream Recipes for Summer

I don’t know who needs to hear this, but wellness and ice cream are allowed to exist in the same sentence.

Every summer, social media becomes a strange place. Half of the internet is drinking green juice, the other half is eating gelato on holiday, and somehow we’re expected to believe these two lifestyles cannot coexist.

Personally, I refuse to choose.

If I’m sitting in the sun, I want ice cream. What I don’t want is the inevitable sugar crash twenty minutes later.

So this year I’ve been making healthier versions at home. Not because I’m trying to reinvent dessert, but because they’re genuinely delicious. Think creamy Greek yoghurt, sweet mango, rich tahini and matcha. The sort of ingredients that make you feel good without making you feel like you’re eating something “healthy”.

Here are the four recipes currently living rent-free in my freezer.

Strawberry Cheesecake Protein Ice Cream

The recipe for anyone who wants dessert and protein at the same time.

You’ll need:

  • 250g Greek yoghurt

  • 150g strawberries

  • 1 tbsp honey

  • 1 scoop vanilla protein powder

  • 1 tsp vanilla extract

  • Crushed digestive biscuits

How to make it:

  • Blend the strawberries until smooth.

  • Stir together the strawberries, yoghurt, honey, protein powder and vanilla.

  • Fold through half of the biscuit crumbs.

  • Freeze for 4-5 hours.

  • Top with the remaining biscuit crumbs before serving.

Mango Coconut Ice Cream

It’s holiday in a bowl.

You’ll need:

  • 2 ripe mangoes

  • 200ml coconut milk

  • 1 tbsp honey

  • Juice of half a lime

How to make it:

  • Blend all ingredients until smooth.

  • Pour into a freezer-safe container.

  • Freeze for 4-5 hours.

  • Serve with extra mango on top.

Salted Banana Tahini Ice Cream

Possibly the most underrated flavour combination ever created.

You’ll need:

  • 3 frozen bananas

  • 1 tbsp tahini

  • Pinch of flaky sea salt

  • Splash of milk

How to make it:

  • Blend everything together until creamy.

  • Freeze for 2-3 hours.

  • Finish with extra sea salt.

Matcha White Chocolate Frozen Yoghurt

For the people who order matcha before they’ve even looked at the menu.

You’ll need:

  • 250g Greek yoghurt

  • 1 tsp matcha powder

  • 1 tbsp honey

  • White chocolate chips

How to make it:

  • Mix the yoghurt, matcha and honey together.

  • Fold through the white chocolate chips.

  • Freeze for around 4 hours.

  • Leave for a few minutes before scooping.

Will these recipes transform your life? Probably not.

Will they make a hot afternoon significantly better? Absolutely.
